Cocoa mass

Cocoa mass, also known as cocoa liquor or cocoa paste, is a key ingredient in chocolate production. It is derived from the cacao bean, which grows on cacao trees in tropical regions like Africa, South America, and Asia. The cacao bean is harvested, fermented, roasted, and then ground into a thick, smooth paste to make cocoa mass.

To create cocoa mass, the cacao beans are first cracked open to extract the nibs inside. These nibs are then ground into a liquid form, resulting in cocoa mass. This pure form of chocolate contains cocoa butter and cocoa solids in a rich and concentrated state. Cocoa mass serves as a fundamental building block in various chocolate products.

Cocoa mass often appears on food labels because it contributes to the rich, intense chocolate flavour in products like dark chocolate, truffles, and other confectionery items. It also provides texture and structure to chocolate bars, cakes, and cookies. Additionally, cocoa mass can enhance the aroma and overall quality of baked goods, giving them a distinctive chocolaty taste that many people enjoy.
