Gluten

Gluten is a type of protein found in cereal grains like wheat, barley, and rye. It gives dough its elastic texture and helps food keep its shape. This protein is what makes bread chewy and gives pasta its firm texture.

To make gluten, the grains containing it, like wheat, are ground into flour. Then, when the flour is mixed with water, the gluten proteins form a sticky network that gives dough its stretchy quality. This dough can then be shaped into various food products like bread, pasta, and pastries.

You will often see gluten listed on food labels as it plays a crucial role in baking and food production. Foods like bread, cakes, biscuits, and pastries usually contain gluten because it helps them rise and maintain their shape. Gluten is also present in many processed foods such as sauces, soups, and even some unexpected items like salad dressings and ice cream.
