Muscovado sugar

Muscovado sugar is a type of unrefined sugar that comes from sugarcane. It is a dark brown sugar with a strong molasses flavour and a slightly sticky texture. Muscovado sugar retains more of the natural minerals present in sugarcane, giving it a distinct taste compared to white sugar.

To make muscovado sugar, sugarcane juice is boiled to form a thick syrup. The syrup is then evaporated until it crystallises, resulting in the formation of muscovado sugar crystals. These crystals are then crushed and dried to produce the final product. The process of making muscovado sugar retains more of the natural molasses content, giving it its characteristic rich flavour and colour.

Muscovado sugar is often used in baking to add a deep, caramel-like flavour to cookies, cakes, and desserts. It can also be sprinkled on top of porridge or used to sweeten sauces and marinades. Because of its strong flavour and colour, muscovado sugar is commonly found in recipes where a rich, intense sweetness is desired, such as gingerbread, chocolate brownies, and BBQ marinades.
