Palm stearin

Palm stearin is a type of fat derived from palm oil, which comes from the fruit of oil palm trees. It is commonly used as an ingredient in various food products.

To make palm stearin, palm oil undergoes a process called fractionation, where different components of the oil are separated based on their melting points. Palm stearin is the harder fraction of palm oil, solid at room temperature and with a higher melting point compared to palm olein, another fraction of palm oil.

You may find palm stearin listed on food labels as it is used to improve the texture and consistency of products such as margarine, chocolate, and baked goods. Its properties help stabilize the structure of these foods, giving them a smoother texture and ensuring they hold up well during storage and cooking.
